Instructions
 

Step 1: Grill the Chicken

  • Preparation: Season the boneless, skinless chicken breasts with salt and pepper on both sides.
  • Grill: Heat your grill or grill pan to medium-high heat before cooking. Brush with olive oil to prevent sticking.
  • Cook: Place the chicken breasts on the grill and cook for about 6-7 minutes per side, or until the internal temperature reaches 165°F (74°C) and the chicken is nicely charred and cooked through.
  • Rest: After grilling, allow the chicken to rest for a few minutes before slicing it.

Step 2: Prepare the Sandwich

  • Toast the Bread: Lightly toast the sourdough bread slices either on the grill or in a toaster until golden and crisp.
  • Spread Pesto: On one side of each slice of bread, spread a generous amount of fresh basil pesto.
  • Layer: On the bottom slice of bread, layer mozzarella cheese slices, followed by the grilled chicken slices, sliced tomatoes, and arugula leaves.
  • Assemble: Create the sandwich by placing the grilled chicken between two slices of bread spread with pesto.
