Ingredients
  

  • 2 cups all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 3/4 cup butter softened
  • 1 cup sugar
  • 1 egg
  • 2 tbsp lemon juice
  • 1 tbsp lemon zest
  • 1 tsp vanilla extract
  • 3/4 cup raspberries chopped

Instructions
 

  • Cream butter and sugar until light and fluffy.
  • Add egg, lemon juice, zest, and vanilla, mix well.
  • Combine dry ingredients separately, then mix into wet ingredients.
  • Fold in raspberries gently.
  • Scoop dough onto baking sheet and bake at 180°C for 12-15 minutes.

Notes

  • Do not overmix raspberries
  • Chill dough if too soft
  • Use fresh lemon for best flavor
