Chicken salad

  • 3 cups shredded rotisserie chicken skin and bones removed
  • 2 stalks celery, finely chopped
  • 0.25 cup red onion, minced
  • 3 tablespoons sweet relish or chopped pickles
  • 2 tablespoons pickle juice from the pickle jar
  • 0.5 cup plain Greek yogurt
  • 0.25 cup mayonnaise
  • 1 teaspoon Dijon mustard
  • 0.5 teaspoon salt or to taste
  • 0.25 teaspoon black pepper or to taste

Instructions
 

  • Add the shredded rotisserie chicken to a large mixing bowl and set aside.
  • Stir in the chopped celery and minced red onion, scattering them evenly over the chicken.
  • In a separate small bowl, whisk together the Greek yogurt, mayonnaise, Dijon mustard, relish, pickle juice, salt, and black pepper until smooth and creamy.
  • Pour the dressing over the chicken mixture and gently fold everything together until the chicken is well coated but still in small chunks.
  • Taste and adjust the seasoning with more salt, pepper, or pickle juice as needed, then chill for about 15 minutes or serve right away.

Notes

For extra crunch, add sliced almonds or chopped celery just before serving. If the salad thickens in the fridge, loosen it with a spoonful of yogurt or a splash of pickle juice.
