Ingredients
  

  • 32 oz frozen diced hash brown potatoes thawed slightly
  • 14 oz kielbasa sausage sliced into 1/2-inch pieces
  • 1 small yellow onion diced finely
  • 2.5 cups shredded sharp cheddar cheese divided
  • 10.5 oz cream of mushroom soup
  • 0.5 cup sour cream
  • 1 tsp Creole seasoning
  • Salt and black pepper to taste

Instructions
 

  • Spray your slow cooker with nonstick spray. Layer in hash browns, sliced sausage, diced onion, and 2 cups of the cheese. Stir gently.
  • In a bowl, whisk cream of mushroom soup, sour cream, Creole seasoning, salt, and pepper until smooth. Pour over mixture and stir to coat.
  • Sprinkle remaining cheese on top. Cover and cook on low for 6 hours or high for 4 hours.

Notes

  • Saute sausage and onions first for deeper flavor.
  • Use fresh potatoes? Add 1 hour cook time.
  • Stir halfway if convenient.
