- 1 lb sirloin steak cut into 1-inch bite-sized pieces
- 2 medium sweet potatoes peeled and diced into 1/2-inch cubes
- 2 bell peppers red and green, seeded and diced
- 3 tablespoons olive oil divided
- 4 cloves garlic minced
- 1 teaspoon smoked paprika
- 1 teaspoon ground cumin
- 1/2 teaspoon onion powder
- Salt and black pepper to taste
- 2 tablespoons coconut aminos
- Fresh cilantro or parsley chopped for garnish
Heat 2 tbsp olive oil in a large skillet over medium-high heat. Season steak bites with salt, pepper, smoked paprika, cumin, and onion powder. Sear in batches 3-4 minutes until browned. Remove and set aside.
Reduce heat to medium. Add remaining olive oil and sweet potatoes. Cook 5-6 minutes until golden.
Add bell peppers and garlic. Sauté 4 minutes until tender-crisp.
Return steak to skillet. Stir in coconut aminos and cook 2 minutes. Garnish with herbs. Serve hot.
