- 1 lb ground beef lean preferred
- 2 medium sweet potatoes peeled and diced into small cubes
- 1 onion chopped
- 2 cloves garlic minced
- 1 tbsp olive oil
- 1 tsp paprika
- 1/2 tsp ground cumin
- 1/2 tsp salt adjust to taste
- 1/4 tsp black pepper freshly ground
- 1/4 cup water or beef broth to help cook the sweet potatoes
- 1/4 cup shredded cheddar cheese optional, for topping
- 2 tbsp fresh parsley chopped, for garnish
Heat olive oil in a large skillet over medium-high heat. Add the ground beef and cook until browned, breaking it apart with a wooden spoon, about 5–6 minutes. Drain any excess fat if needed.
Add the chopped onion and minced garlic to the skillet. Sauté for 2–3 minutes until fragrant and softened.
Stir in the diced sweet potatoes, paprika, cumin, salt, and pepper. Mix well to coat the ingredients evenly with the spices.
Pour in the water or beef broth, cover the skillet, and reduce heat to medium. Let it cook for 12–15 minutes, stirring occasionally, until the sweet potatoes are tender.
Once the sweet potatoes are cooked through, remove the lid and let any remaining liquid evaporate. Taste and adjust seasoning as needed.
Sprinkle shredded cheddar cheese on top if desired, cover for a minute to melt, then garnish with chopped parsley. Serve warm.
For extra flavor, try adding a pinch of chili flakes or smoked paprika. This recipe also works beautifully with ground turkey or chicken for a lighter version.
