Ingredients

  • 4 cups chopped apples Granny Smith, Honeycrisp, or Red Delicious for sweet-tart balance
  • 1 cup crushed pineapple drained well
  • 1 tablespoon pineapple juice reserved from the can
  • cups miniature marshmallows

Creamy Base:

  • 1 3.4 oz box instant vanilla pudding mix
  • 1 cup cold milk
  • You’ll need 1 cup of whipped topping either a store-bought option like Cool Whip or a homemade stabilized version.

Crunchy & Sweet Toppings:

  • ½ cup Spanish peanuts or honey-roasted for extra sweetness
  • ¼ cup caramel sauce homemade or store-bought, for drizzling
  • Optional: ½ cup chopped Snickers bars or ½ cup granola for extra indulgence

Instructions
 

Step 1: Make the Creamy Base

  • In a large mixing bowl, whisk together the vanilla pudding mix and cold milk until smooth and thickened (about 1–2 minutes). Let it sit for a few minutes to finish setting.

Step 2: Add Whipped Topping

  • Gently fold in the whipped topping until the mixture is smooth and fluffy. This will give your salad a creamy, light texture.

Step 3: Fold in the Fruit and Marshmallows

  • Add the chopped apples, crushed pineapple, reserved pineapple juice, and miniature marshmallows to the bowl. Gently stir everything together until well coated with the creamy base.

Step 4: Chill the Mixture

  • Cover the bowl tightly with plastic wrap or a lid and refrigerate for a minimum of one hour. This helps the flavors meld and gives the salad its best texture.

Step 5: Add the Crunch

  • Right before serving, fold in the Spanish peanuts for crunch. If using chopped Snickers bars or granola, add them now as well to keep them from getting soggy.

Step 6: Drizzle and Serve

  • Spoon the salad into a serving bowl or portion it into individual dessert cups. Drizzle with caramel sauce just before serving for that signature taffy apple finish.
