Ingredients
  

Salad Ingredients

  • 4 cups cubed seedless watermelon chilled for best texture
  • ½ cup crumbled feta cheese preferably from a block of feta
  • ½ cup cucumber sliced and quartered
  • ¼ cup thinly sliced red onion optional, adds extra crunch
  • 2 tablespoons chopped fresh mint
  • 1 tablespoon chopped fresh basil

Dressing

  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice or lime juice
  • kosher salt and pepper to taste
  • balsamic glaze optional, for drizzling

Instructions
 

  • Cut the seedless watermelon into small, bite-sized cubes and place them in a large mixing bowl.
  • Slice the cucumber, red onion, and chop the fresh mint and basil.
  • Combine the watermelon, cucumber, red onion, and herbs in the bowl. Toss gently to mix without crushing the fruit.
  • Drizzle the olive oil and lemon juice over the salad. Season with kosher salt and pepper to taste. Toss lightly to coat.
  • Top with the crumbled feta cheese and a drizzle of balsamic glaze if using. Serve immediately.
