Ingredients
  

  • 1 lb Italian sausage mild or hot
  • 1 onion diced
  • 3 cloves garlic minced
  • 6 cups chicken broth low-sodium
  • 1 15 oz can white beans drained and rinsed
  • 1 cup heavy cream
  • 2 cups fresh spinach chopped
  • 1.5 cups ricotta cheese
  • 1 cup mozzarella cheese shredded
  • 0.5 cup Parmesan cheese grated
  • 8 oz lasagna noodles broken into pieces
  • Salt and pepper to taste

Instructions
 

  • Brown the Italian sausage in a large pot over medium heat, crumbling as it cooks. Remove and set aside.
  • Saute onion and garlic in the same pot until softened, about 3 minutes.
  • Add chicken broth and white beans. Bring to boil, then simmer 5 minutes.
  • Stir in broken lasagna noodles and cook until tender, 10 minutes.
  • Add heavy cream, spinach, ricotta, mozzarella, and Parmesan. Simmer 5 minutes until creamy.
  • Return sausage to pot. Season with salt and pepper. Serve hot.

Notes

  • Brown sausage well for best flavor.
  • Stir cheeses in gradually to avoid lumps.
  • Serve with garlic bread.
