- 1 lb Italian sausage mild or hot
- 1 onion diced
- 3 cloves garlic minced
- 6 cups chicken broth low-sodium
- 1 15 oz can white beans drained and rinsed
- 1 cup heavy cream
- 2 cups fresh spinach chopped
- 1.5 cups ricotta cheese
- 1 cup mozzarella cheese shredded
- 0.5 cup Parmesan cheese grated
- 8 oz lasagna noodles broken into pieces
- Salt and pepper to taste
Brown the Italian sausage in a large pot over medium heat, crumbling as it cooks. Remove and set aside.
Saute onion and garlic in the same pot until softened, about 3 minutes.
Add chicken broth and white beans. Bring to boil, then simmer 5 minutes.
Stir in broken lasagna noodles and cook until tender, 10 minutes.
Add heavy cream, spinach, ricotta, mozzarella, and Parmesan. Simmer 5 minutes until creamy.
Return sausage to pot. Season with salt and pepper. Serve hot.
- Brown sausage well for best flavor.
- Stir cheeses in gradually to avoid lumps.
- Serve with garlic bread.
